Black garlic is our Romanian Red garlic that has been aged and cured in a hot, humid environment for several weeks, resulting in a different flavor, texture, and color than regular garlic. The process causes the garlic to eventually turn black, and undergo enzymatic reactions that concentrate sugars and temper flavors. The result is a softer, chewier, denser, and sweeter garlic with a milder flavor and a more delicate, sticky consistency than raw garlic. Black garlic has been described as having a unique taste that's similar to aged balsamic vinegar with a hint of roasted garlic, or as having a mild sweetness, a nuttiness, or tasting like molasses.
